Oatmeal Cake

One of our family favorites. A moist cake with a frosting reminiscent of a German Chocolate Cake. I love using salted pecans because of the salty/ sweet it adds to the frosting. 

Ingredients

CAKE:

  • 1-1/2 cups boiling water
  • 1 cup quick oats
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs, slighly beaten
  • 1 teaspoon vanilla
  • 1-3/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

FROSTING:

  • 1 tablespoon light corn syrup
  • 1 cup brown sugar
  • 1/4 cup butter
  • 1/2 cup cream
  • 1 cup coconut
  • 1 cup salted pecans, chopped

Instructions

CAKE:

  1. Combine boiling water and quick oats and allow to cool while mixing the rest of the cake. Mix remaining ingredients together. Add cooled oatmeal mixture and beat well. Spread batter in greased 9" x 13" baking pan. Bake at 350° for 25-30 minutes. While cake is baking, prepare frosting.

FROSTING:

  1. Bring corn syrup, brown sugar, butter, and cream to a boil. Remove from heat, Stir in  coconut and pecans. Spread on cake while its still hot and return to oven, Broil just until frosting is slightly browned and bubbly. Cool.
